Mountain Rice Pudding with Ube and Cheesy Coconut Sauce made with Che-Vital Quickmelt Cheese

đź“ŚIngredients of Mountain Rice Pudding with Ube and Cheesy Coconut Sauce:
– 1 cup Che-Vital Quickmelt Cheese (grated)
– 1 1/2 glutinous rice, soaked overnight (can sub brown or white rice but don’t soak)
– 2 cups ube halaya
– 1/3 to 1/2 cup white sugar
– 1 tsp salt
– 3 cups coconut water (or water)
– 1 cup full fat canned coconut cream
– 2 cups coconut cream
– 2 cups coconut sugar
– garnish with more cheese
